A client who asks for a cheaper finish or one tall unit less gets a new quote version rather than an edited file. The earlier version stays on the project with its date and who sent it. The printed copy can show unit lines in detail, or a single figure for the kitchen with the specification listed below, depending on how your showroom quotes. Discount limits can be set by role.

Yes. Rates may sit per running foot, per unit or both, and the printed quote can hide or show the breakup.
What happens when the client asks for changes?
A new version is raised. The old one remains readable, so the two can be compared with the client.
Are appliances included?
Only if you supply them. Chimney, hob and sink can be quoted as lines or left out for the client to buy.
Can a designer give a discount?
Up to a limit you set for that role. Anything beyond it waits for the owner to release.
