An export of sales and purchase entries into Tally is handled as its own item, with its own quote. Which ledgers it posts to is chosen with your accountant, who knows how the books are kept. You decide which channels go live first. Some can wait until the showroom is already running on the system.

Can we start without any connections?
Yes. The counter can start on printed quotations and handwritten receipts. Each connection can come later.
